Chicken Scampi

Happy Weekend! We hope you had a great weekend! The weather was beautiful and we certainly enjoyed the entire weekend. Today certainly is a large change weather wise from last week. We've shut the AC off and all the windows are open. Beautiful! Friday night and last night we enjoyed a bonfire with some friends. This was the first weekend of bonfires, so of course we had to have some S'mores. YUMMO!!
Yesterday, Holly was nice enough to pick up a lovely red geranium plant for our deck as a birthday gift.
Our veggies and herbs are growing like mad! The cukes, squash, tomatoes & peppers all have flowers and fruits blooming. Of course, yesterday while I was at Meijer, I couldn't help but pick up some canning materials - I'm so ready to start picking our veggies! So today we've enjoyed the weather and for dinner, we decided to give the Olive Garden Chicken Scampi Recipe a try. I don't know if you've checked out the 'Top Secret Restaurant Recipes' cook books, but Glen's mom picked up one for us and we love it. It's great because the author of the book basically recreates recipes from restaurants. A few weeks ago in one of the inserts in the paper on Sunday the Olive Garden had coupon and photo of their Chicken Scampi. It looked awesome so we decided to make it for dinner tonight.
Now mind you, neither of us have had the chicken scampi from Olive Garden, but our version of it was pretty darn fantastic!!
How YUMMY does this look??It tastes even better than it looks. A definite DO-OVER at our house!!
Wishing you a great week!

Happy Father's Day!

Wishing a Happy Father's Day to our wonderful dads. We are so blessed!!
We enjoyed a good 'ole Tigers baseball game with my folks today. Nothing like a Sunday, a baseball game, great weather, ball park hot dogs, peanuts, pop corn and a Tigers WIN! 3-2! Oh, and of course a little sun burn! :o)
What a great weekend!
We hope you had a wonderful weekend, enjoyed the beautiful weather and celebrated with the great dad in your life!

Weekend First

What a great weekend - nice & relaxing! I was able to get my massage Saturday morning, which was fabulous - thanks to Glen :o) - it was part of my Christmas gift.
I felt like jell-o the rest of the day. It was wonderful!!

So, our weekend first - we talked about making our own pizza - everything from scratch, including the dough. So, today, we decided to make our pizza. We got the dough into the bread machine and got the fixins together. We ended up grilling the mini pizzas, of course, not without some drama - we got 1/2 way through the grilling process and the rain that they'd been talking about all weekend that never came, arrived. DOH!
So, here are our mini pizzas -How yummy do they look???
Thanks honey for a fun meal!! My hubby, World's Best Griller - no matter the subject is!
Hope you had a great weekend - and have a good Monday!

Ah, the life of a Cat

Glen and I have both talked and have decided that when we come back in an afterlife, we want to come back as our 2 cats. What a life they have - this is how they spend their days. Ah, the life of a Cat!!
GO WINGS!

Rainy Days & Mondays.....

are the perfect reason to take a nap!
We hope you had a nice weekend and participated in cheering on the Red Wings Saturday & Sunday.
It was a productive growing weekend - the veggies are going like crazy. Our Garlic Chives have broken ground and I'm sure with all the rain we're in for for the next few days, they'll be growing like weeds before we know it!
Mental Note to Self: AVOID COSTCO like the PLAGUE on the weekend!! This weekend I was reminded WHY I'd much rather "visit" (and I use that term loosely) Costco or the Grocery store Monday through Thursday after work instead of Friday, Saturday or Sunday, anytime during the day!! Thankfully we don't have to make another Costco trip any time soon! But, on your next "visit" to Costco, if you haven't already tried these, they are a definite summer treat recommendation from the Kantina!
Tropical Sorbet.
Not only are they scrump-deli-umpsious, but the container they come in is the rind of the fruit of the sorbet flavor. Coconut comes in a half coconut shell, pineapple in a half pineapple, lemon in a half of a lemon, etc. YUMM-O
Glen's cousin Joyce introduced us to these last summer.
Well, here's hoping your flowers & veggies are gowing like crazy!
Off to get some dinner - I think we're going to have some 'tovers tonight and some fresh watermelon. Mmmmmmm!
