Quick & Easy Dinner

YUMMO! Glen and I tried a new recipe last night - some how or another we've never made stuffed peppers before. Well, we found a recipe that sounded good to us and made a few changes - we used sweet red peppers instead of the green peppers and gave it a try last night! A DEFINITE DO OVER!!! So I thought I'd share.
Sweet Stuffed Red Peppers
2 Medium Sweet Red Peppers
1 pound ground beef
2 can (8 ounces) tomato sauce, divided
1/2 cup uncooked instant rice
6 tablespoons shredded cheddar cheese, divided
2 tablespoon chopped onion
1 teaspoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon pepper
2 egg, beaten
Slice peppers in half long way (I guess you could cut them in half short ways to and make mini cups), remove seeds and discard tops & stems. Blanch peppers in boiling water for 5 minutes (this was a first - I've never done any blanching - was kind of cool - yep, lame I know, amazing what small things entertain me). Drain and rinse in cold water; set aside.
In a bowl, combine beef, 1/2 cup of tomato sauce, rice, 4 tablespoons of cheese, onion, Worcestershire sauce, salt, pepper and egg; mix well. Stuff the peppers; place in an ungreased 1-1/2-qt. baking dish. Pour the remaining tomato sauce over peppers. Cover and bake at 350° for 45-60 minutes or until meat is no longer pink and peppers are tender. Sprinkle with remaining cheese; return to the oven for 5 minutes or until cheese is melted.
Enjoy with a little sour cream on the side (Sounds weird, but we're a Polish family and eat our cabbage rolls with sour cream too)!
Enjoy!

A chance to sit down with a legend

What a cool night we had Thursday night. For quite sometime my mom has been doing all the embroidery and heat sets for the Kronk Gym. Both my mom and dad have worked on a regular basis with Emanuel Steward's daughter on all the clothing as well as charity events.
Well, we had a chance to sit down with Emanuel, Sylvia and my mom and dad Thursday night. What a super cool way to spend the evening.
We got to meet Andy Lee also, one of Emanuel's current boxers.
If you'd like to get your hands on some of the cool Kronk merchandise, you can order directly from the Kronk store website.
Check it out.
Happy Snowy Day!

A Past Home Improvement Project

My friend Shelly and her hubby who live out of state are planning to do some painting this weekend. I was telling her about our Master Bedroom that we painted a few years ago and thought I would share a few photos. So, here we go. We decided on these colors because they reminded us of a tropical oasis. My dad thought we needed our heads examined when we said yellow & orange, but was a huge fan once it was finished! Fits right into the tropical theme of our house!

Hope you're having a tropical sunshiney day!

Fiesta!

I thought I'd share this Fab-o recipe I found in the Spring '09 Cooking for 2 magazine. This is what's for dinner tonight since the rain has moved in and it's just not as fun to grill in cold February rain like it is to grill in warm July or August rain!

Fiesta Smothered Chicken - super fast, super easy and SUPER YUMMY!
3 tablespoons reduced-sodium soy sauce
1 tablespoon Worcestershire sauce
1/4 teaspoon garlic powder
2 boneless skinless chicken breast halves (5 ounces each)
1/2 cup sliced fresh mushrooms
1/4 cup chopped onion
4 teaspoons chopped seeded jalapeno pepper
6 teaspoons butter, divided
1/4 cup shredded pepper Jack cheese
1/4 cup shredded cheddar cheese
In a large resealable plastic bag, combine the soy sauce, Worcestershire sauce and garlic powder; add the chicken. Seal bag and turn to coat; set aside. In a large nonstick skillet coated with cooking spray, saute the mushrooms, onion and jalapeno in 2 teaspoons butter until tender. Remove and keep warm. Drain and discard marinade. In the same skillet, cook chicken in remaining butter over medium heat for 4-5 minutes on each side or until juices run clear. Spoon vegetable mixture over each chicken breast; sprinkle with cheeses. Cover and cook for 1-2 minutes or until cheese is melted. Makes 2 servings.
Enjoy!

Nothin' like Chicken on the Grill!

So, we can FINALLY see the deck and don't have to go dashing thru the snow to get to the grill. So, in honor of the happy fact that the snow is melting and we're seeing 40* and sunshine, last night we had to do some grillin' for dinner! Since the grill has been buried in snow for the last three months, there's nothing like dinner off the grill in February with sunshine and no snow!!
Kind of gives you the false hope that spring is right around the corner.....until it snows again. But we're gonna be grillin' while the grillin' is good!
Tonight - good 'ole burgers & dogs on the grill. YUMM-O!
Happy Warm Weather!

Baby Shower & Bong Shop....?

What do these two things have in common? Two things that were visited this weekend......
My favorite cousin Teri is having a baby girl in March and her baby shower was yesterday. While I was in the car, headed to the baby shower (about 1 1/2 hours from us), I talked to my folks who I was meeting up with for the shower. Turns out my mom's shop was flooding. They weren't sure what the source of the water was. They were waiting for the plumber to arrive.
So, my mom met me at the baby shower. We were able to see my cousin, have a nice little baby shower lunch and ooo'ed and aaah'ed at all the cute little girlie baby stuff.
About 3, mom got an update from dad - a 4" drain pipe in the wall of mom's store was cracked and leaking. The plumbers & maintance folks were at the store and trying to 'fix'/'figure-out' next steps. So, off to the store we went.
While we were waiting for an update, mom, dad & I took a walk about the shopping plaza mom's store is in - we window shopped and looked at the gorgeous dresses the dress shop had in the window and that's when it happened - a Bong shop had recently become part of the shopping plaza. So, of coure, we had to take a walk inside (Dad had been in there earlier b/c they had some water in their store too). My mom was educated yesterday. We all walked out and had to good laugh - 'What did you do this weekend?' 'Went to a baby shower and the bong shop'. :) How's that for a interesting conversation?! Always something silly with our family.
Sorry, no photos - I forgot the camera in the car.......
Today though, nothing too exciting - just enjoying the wonderful sunshine and a Sunday afternoon.
Hoping you had a nice weekend and got to enjoy some sunshine on your face.

We've got ourselves an Interior Designer....

and he lives in our aquarium.......for some reason, he's not a fan of the top and bottom of the clam shell being attached, or even close to one another in the tank.
He's our official 'tank redecorator' and his only fee, a few algea wafers a week. What a deal!
Happy Hump Day!

So, what was YOUR Favorite Commercial?

So, one of my favorite parts of the Super Bowl (beside the football munchies) is the commercials. That's the part I look forward to every year. But this year I think we were both a bit disappointed with them.
There were just a handful that we enjoyed. Usually, you can't go wrong with the Budweiser/Bud Light spots, which was mostly true this year. Some of our favorites this year though were, the Bridgestone -Taters commercial with Mr. & Mrs. Potato Head, The Castrol Commercial with the 'Grease Monkeys' and the Monster.com ad that had the poor guy sitting under the back end of the Moose.....we were kind of waiting for 'something' to happen......
You can check out any you missed here http://www.youtube.com/superbowl (I tried to link the actual videos here but apparently I'm not as super high-techie as I thougth I might be).
Hope you had a great day!

Happy Super Bowl Sunday!

As always, we look forward to the Super Bowl each year. We get together our squares for the big game, the menu and laugh at the different things you can bet on in Vegas. So, that's what we're doing today. We made a grocery store run last night to pick up a few of the things we needed for munchies - Glen found a Bacon Explosion (or Heart Attack-Clog Your Arteries on a plate) that the folks on WRIF were talking about Friday. The reason I say Heart Attack on a Plate is it involves 2 pounds of sausage and 2 pounds of bacon - those are the main two ingredients along with BBQ sauce and BBQ rub. That's it -4 ingredients. Anyway, we needed to pick up the 4 pounds of meat and some BBQ sauce last night in addition to healthier items like tomatoes, lettuce and some deli meats for Club Quesadillas.
When we're trying to speed thru the grocery store and have just a few things on the list, we each take a few items and rendezvous back at a set point and check out. So, Glen had the 4 pounds of meats, beverages and BBQ sauce. I had the deli meats, veggies, bread and tortillas. We bumped into one another by the Mexican aisle as Glen was headed to the BBQ aisle. I told him I'd meet him over there in front of the BBQ sauces. So when I get over to the BBQ sauce aisle, Glen is trying to find the Famous Dave's Sweet & Zesty sauce. And neither of us can find it.
My question - since when did they stop carrying Famous Dave's BBQ sauce.....I saw it just last week.
So, my reason for this post after that long intro - this is why we couldn't find it......
notice anything out of the ordinary?? Understand why it took a few minutes longer in the BBQ Sauce aisle at the grocery store?
Good, glad we weren't the only ones that had to take a second look! For those of you that are tilting your head trying to read the label, yep, it's on up-side down, or bass ackwards!
Guess the quality control person was already looking forward to Super Bowl Weekend, huh?
Happy Commercial watchin!
Go Steelers!
